పచ్చి చింతకాయ పచ్చడి/PACHHI CHINTAKAYA PACHHADI/RAW TAMATEND CHUTNEY



INGREDIENTS

Chinthakaayalu/ Green Tamarind/ Raw Tamarind - 5 big ones
Green chillies - 5
Red chillies - 5
Coriander Seeds/ Dhaniyalu - 1 tsp
Mustard seeds - 1/2 tsp
Fenugreek Powder/ Menthi podi - 1/2 tsp
Salt
Oil - 2 tbsp (Preferably Sesame oil however any oil is fine)
Asafoetida/ Inguva - 1/2 tsp
Turmeric - 1/4 tsp

Method

Wash chintakaayalu and cut them length wise and discard seeds if any.
Heat oil in a pan and add Mustard seeds, when they splutter add Coriander seeds , Red chillies and lastly add Fenugreek powder and Asafoetida.
Grind green chillies and the above fried seasonings with out adding oil.
Add chopped Raw tamarind to the above paste and grind .
Now add turmeric, Salt and grind once again.
Add the rest of the oil to the paste and mix well.
Tasty chintakaaya pachadi is ready.

This goes with hot rice ..
It tastes great with Kandi Podi.

రవ ఇడ్లి/ Rava Idli/ Steamed Semolina cakes

(Makes 8 to 10 idlies)

INGREDIENTS:

Rava/sooji/semolina------1 cup (rice cooker measure)
Fresh curd/perugu/yogurt---1and 3/4 cup
Water----------------------1/2 cup
Salt to taste
Cashews ------------- 6
Cooking soda----------1/4 tsp



Seasoning:

Avalu/mustard seeds---------1/2 tsp
Bengalgram dal/sengapappu--1tbs
Split black gramdal------------1/2tbs
Curry leaves------------------few
Red chillies -------------------1 or 2 (cut in to pieces)
Oil----------------------------1 tbs.

METHOD:

1.Heat oil in a pan and add seasonings.
2.When it is done add curry leaves and rava.
3.Fry rava lightly and let it cool.
4.Take curd add rava, salt, water and cooking soda mix well(you can add more water until you get idli batter consistency) and keep aside for 10 minutes.
5.Grease idli moulds pour batter and steam for 10 minutes
6.Rava idli is ready to eat.

You can store fried rava mixture. You can add yogurt and water to the mixture when ever you want to make idlies.
Eat with chutney or chutney powder.

Variations: You can add grated carrots and tomato slices in it.

మామిడికాయ పచ్చడి/ Mamidikaaya Pachadi/ Mango Chutney



INGREDIENTS:
Mamidi kaya/Raw mango----1 Small
Green chillies---------------4
Red chillies-----------------4 to 6 (as per sourness of mango)
Salt to taste
Fenugreek /menthulu---------1/4 tsp
Avalu/mustard seeds---------1/2 tsp
Oil/Nune----------------1/2 tbs
Turmeric/pasupu---------1/4 tsp
Heeng/inguva/asafoetida----1/2 tsp

METHOD:
1.Heat oil in a small pan and add mustard seeds, when they splutter add
fenugreek,red chillies,and heeng. Let it cool.
2.Clean and cut mango into small pieces.
3 Grind green chilies, red chillies, seasoning and salt together.
4.Make paste add mango pieces, turmeric and grind.(do not make a smooth paste)


It tastes great with Rice.

కొబ్బరి అన్నం/ Kobbari Annam/ Coconut Rice




INGREDIENTS:
Rice---------------------------3 cups(cooked)
Coconut/pachi kobbari----------1 cup (grated)
Green chillies-----------------3 (chop length wise)
Salt to taste.
Bengal gram /sengapappu---1tbs
Split black gram/minapappu---1/2 tbs
Avalu/mustard seeds----------1 tsp
Heeng/asafetida---------------1/4 tsp
Curry leaves-----------------few
Oil----------------1tbs

METHOD:
1. Heat oil in a big pan.
2. Add mustard seeds, when it splutters add dals.
3. Add chillies, curry leaves and finally heeng.
4. Now add grated coconut and fry.
5. Add salt to it and mix well.
6. Add cooked rice to the mixture and mix well.
7. Remove from fire.
8. Serve hot.

దిబ్బ రొట్టె: Dibba Rotte- Black gram pancake



INGREDIENTS:
Black gram/minapappu-----1 cup
Idly rava/cream of rice------2 cups(if grinded in mixer or in wet grinder add 3 cups)
Salt to taste

METHOD:

1. Soak dal in water for about 2 hours.
2. Grind dal by adding water to make smooth batter.(like idly batter)
3. Wash rava and squeeze and add it to the batter.
4. Add salt and mix well.
5. Take a deep pan add oil and heat it.
6. Pour batter of two to three big serving spoons in pan and cover with lid and cook on low flame.
7. Poke with fork and check if it is done
8. When it is done eat with any chutney.
9. On one side it will be brown and crispy and on another side it tastes like idly.

Note: No need to ferment and thickness of the roti is about 2".

దోసకాయ కూర: Dosakaaya Kura- Yellow Cucumber curry



INGREDIENTS:

Medium size dosakaya/cucumber----1
Bengal gram/senagapappu-------1 tbs (soaked in water)
Minapappu/black gram ------------1/2 tbs
Avaalu/mustard seeds----------------1tsp
Red chillies/yendu mirapakayalu-----2
Curry leaves--------------------few
Oil-------------1/2 tbs
Salt to taste

METHOD:

1. Soak bengal gram dal for half an hour.
2.Peel cucumber and taste a piece, discard it if it tastes bitter.
3.Cut into small cubes.
4.Heat oil in a pan add mustard seeds, when it splutter add black gram,
red chillies(cut in to two pieces)and curry leaves.
5.Then add cucumber, bengal gram and little water.
6.Add salt and cover with lid cook in low flame.
7.Stir in between.
8.when it is done eat with rice.

చక్కర పొంగలి: Chakkara Pongali- Sweet Pongal/pudding


Sankranthi special

INGREDIENTS:

Rice---------1 cup
Jaggary/brown sugar/bellam--1 1/4 cup or(as per taste)
Pesarapappu/green gram dal---1/4 cup
Senagapappu/bengalgram dal-----1/2 tbs(optional)
Milk--------4 cups
Cardamom/elaachi-----1/2 tsp (powdered)
Cashews/jeedipappu-----few
Ghee/neyyi-------1tbs

METHOD:

1.Lightly roast dals.
2.Mix it with rice and add milk and pressure cook.
3.Take thick bottem vessel melt jaggary and add cooked rice.
4.Mix it well and cook for 5 minutes.
5.In a different pan heat ghee, add cashews fry them till
light golden brown.
5.Add cardamom powder and cashews to the pongal.

This is my way of making pongal. If you don't like
adding bengalgram dal. Make with out that.

బూంది లడ్డు/ Boondi Laddu/ Chickpea Flour Sweet

Ingredients

Senagapindi/chick peas flour/besan --1 cup
Sugar-----------1 cup
Cashew nuts----1 tbs
Almonds----------1 tbs
Cordamam--------1/2tsp (powdered)
Raisens/endu draaksha/kismiss-----1tbs
Yellow color---------Pinch (optional)
Edible camphor crushed----pinch
Oil to deep fry

Method:

Sift the flour and add water, color to it. The batter should be of dosa batter consistency ( not too watery).Make sure there are no lumps in the batter.

In a vessel add 1 cup of water to the sugar and on medium heat and keep stirring it until you get single string consistency. You can check the consistency by taking a drop of syrup and pressing that in between your fingers. If you see a string then consider it as done.

Deep fry Cashews, Almonds and Raisins separately and keep them aside.

Heat oil in a deep bottomed pan.


Hold the steel skimming ladle above the hot oil and pour a small amount of batter on it. When the drops of batter fall into the oil they should bubble up immediately. Let them cook for 6-8 seconds. Take them into a paper towel to drain the oil.

To see if the boondis are perfectly cooked for laddus, press one in between your fingers. It should get squeezed in, instead of cracking and breaking into pieces.Make sure boondi doesn't turn into brown color.

If the temperature of the oil reduces the boondis will stick together. The boondis should cook and come up separately.

Now add boondi, Cashews, raisins, baadam and edible camphor to the syrup and mix them well. Boondis will absorb the syrup and then you can start making laddus.

This is my pinni's recipe I learnt from her.
Boondi Laddus are usually made during festivals.
There is a saying that there is no marriages is conducted
with out having boondhi laddu.

కార్న్ ఫ్లేక్స్ మిక్స్తుర్ / Corn Flakes Mixture



Ingredients:

1.Corn flakes-------2 cups(available in Indian stores)
2.Peanuts-----------1cup
3.Roasted Chick Peas/ Putnala pappu---1/4 cup
4.Curry leaves--------few
5.Green chillies--------5to8
6.Salt to taste
7.Chilly powder--------2 tsp
8.Oil------------------For deep fry

Method:
Heat oil in a pan.
Insert a deep slotted/holes ladle into the hot oil. (as shown in picture)
Add few cornflakes to the oil in the slotted ladle.











When the cornflakes are fully done, remove the slotted ladle from the oil, spread the fried cornflakes on a paper towel & let the oil drain (as shown in picture).















Continue to do the same until all the flakes are done.
Fry Peanuts and Curry leaves.
Cut chillies into two lengthwise and fry them.
Now, take a big bowl, place all the fried items, add salt, chilly powder and mix well.














Store this mixture in airtight container.

మామిడి కాయ పులిహోర/Mamidi kaya pulihora/Raw mango rice





Serve 2 persons




Ingredients:
Raw mango------1 or 11/2 as per the sourness of mango
Rice -- 1 cup (Rice cooker measure)
Salt to taste
Turmeric------1tsp
Curry leaves-----few
Asafoetida------1tsp
Aavalu/mustard seeds----1tbs
Green chillies-----------5 to 6



Seasoning:

Oil------------2 tbs
Senaga pappu/bengal gram dal--1 tbs
Minapappu/ black gram dal------1/2 tbs
Aavalu/ mustard seeds----------1 tsp
Peanuts/ Ground nuts/verusenaga pappu------2 tbs


Method:

1. Cook rice and add turmeric and spread it in a bowl. Let it cool.
2. Grind chilly and 1tbs of mustard seeds to a paste.
3. Heat oil in a pan and add Mustard seeds, when it splutters add dals and nuts and fry them. Let it cool.
4. Grind mango and make a paste.
5. Mix mango paste to the rice and then add mustard chilly paste.
6 .Finally add seasoning and mix well and eat.















Variations: You can grate mango instead of grinding.

ఉప్పుపొంగలి: Uppu pongali- Salty Mung bean & rice pudding


Serving 2 persons

INGREDIENTS:

Rice----------1 cup(rice cooker cup)
Dehusked split Mung beans/Split green gram/ Pesarapappu/ Dhuli Moong dal-1/4 cup
Ginger/ allam--------1" piece
Green chilly/ Pachi mirapa kaayalu --2

Seasoning:

Black gram dal/ Urad dal/ Minapappu-1tbs
Black pepper corns/ Miriyalu-----1tbs
Cumin seeds/Jeelakarra/ Jeera----1tsp
Mustard seeds/ Aavalu----------1tsp
Cashew nuts/ Jeedi pappu--------10 pieces
Ghee---------------------2tbs

METHOD:

1. Light roast dal .
2. Cut green chillies length wise
3. Peel and cut ginger in to small pieces.
4. Wash rice, mix roasted dal and pressure cook them for 3 whistles.
5. When the pressure releases add salt.
6. Heat ghee in a small pan and add mustard seeds.
7. When it splutters add one after one all ingredients.
8. Finally add ginger pieces,chilly and turn off the fire.
9. Add the seasoning to the cooked pongal.
10. Mix well and serve hot.

This is a very tasty break fast item, also a special festive dish.
This is a special item made during navaratri and dhanurmasa.

చారు పొడి/CHAARU PODI/RASAM POWDER

INGREDIENTS:

Split pigeon Peas/ Toor dal 1tbs
Coriander seeds/dhaniya 1 cup
Pepper corn/ black pepper 1/4 cup
Cumin seeds/jeera 1tbs
Asafoetida 1tbs

METHOD:


1. Dry roast dals separately.(lightly)
2. Dry roast coriander seeds, pepper and cumin seeds.(lightly)
3.Finally add heeng and turn off the heat.
4. Keep aside and let them cool.
5. Grind all ingredients together and make powder.

You can use this powder in charu/rasam.

ఆవిరి కుడుము: Aaviri Kudumu- Steamed black gram pancake



INGREDIENTS;

Split black gram dal/minapappu-- 1 cup
Salt to taste
water to grind------1/2 cup


Method: 1


1.Soak dal for two hours.
2. Grind it in to smooth batter by adding water.
3. Take idly moulds grease it and pour batter and cook.
4. Steam them for 10 minutes.
5. Eat them hot with ghee.

Method
: 2 (Traditional Procedure- Used in olden days)

1. Take 1 cup of water in a vessel.
2. Tie a clean cloth on the mouth of the vessel and close the mouth tightly.
(as shown in the picture)
3. Pour some batter in cloth.
4. Steam them for 10 minutes
5. When it is done eat with ghee.

You can make these Kudumulu immediately after grinding the blackgram dal. No need to ferment the batter.


Aaviri kudumu(steamed pancake) are easily digestible and also easy to prepare.This food is given to gain strength.

ఉప్పుడు పిండి/ Uppudu Pindi
















INGREDIENTS:

Rice 1 Cup
Salt to taste
Split yellow Mung bean/Split green gram dal/pesarapappu----1/4 cup
Curry leaves------few
Mustard seeds--------1tsp
Jeera/cumin seeds----1tsp
Minapappu/split black gram dal--1tbs
Red chillies/yendumirapakayalu--2
Oil---------2tbs
Water--------3 cups

METHOD:
1. Grind Rice to a coarse powder( just like Rava)
2.Heat oil in a pan add mustard seeds, when it splutters add minapappu.
3.Then add jeera, red chilly and curry leaves.
4.Add 3 cups of water , salt and boil it.
5.Wash pesarapappu and add to the boilling water.
6.After 5minutes add rava and stir.
7.Cover with lid and cook it on low flame.
8.Stir occasionally.
9. when rava become smooth paste remove from the fire.
10. Eat hot with chutneys.
This is a easy and heavy tiffin item. Enjoy with all chutneys, pacchadis and pickles.

ఆవకాయ: Aavakaya- Green mango in mustard-chilli marinade



INGREDIENTS

3 Mangoes (medium size)
3 cups Aavalu/mustard seeds
1 cup chilly powder/karam (if you want little spicy add more)
1/2 tbs fenugreek/menthulu
1 cup salt
2 1/2 cups gingely(sesame) oil/nuvvula nune

PREPARATION

Clean mangoes and wipe with cloth.
Cut the mango into half and remove the seed from inside. Now, cut the mango into small(desired) size pieces as shown in the picture.
Make powder of mustard seeds.
Mix mustard powder,chilly powder and salt.
Add oil into the mixture .
Take small amount of mango pieces and little amount of mixture and mix well.
Take this into a glass bottle and do the same with all the pieces.
Now close with tight lid.
Mix well again on 3rd day.
Your avakaya will be ready to eat after five days.


This is our family favorite dish. This will go with rice, breakfast and snacks.
This recipe I learnt from my mother-in-law.

ఉసిరిగ ఆవకాయ: Vusiriga avakaya- Indian gooseberry pickle





INGREDIENTS:

Vusiri kayalu/Indian gooseberry-----10 big
Kaaram/Red chilly powder-1/4 cup
Mustard seeds/Aavalu------1/4 cup(powdered)
Fenugreek/Menthulu-------- 1/2 tsp(powdered)
Salt--------------------------------Little less of 1/4 cup
Oil------------------------------1/2 cup
Lemon juice----------------------1/4 cup

SEASONING:

Aavallu---------1tsp
Heeng/aSafoetida--1tsp

METHOD:

1.Clean vusirikayalu .
2.Heat little oil in a pan and add vusirikayalu.
3.Fry them until became brown and let them cool.
4.Take a bowel mix all ingredients and keep aside.
5.Heat oil in another pan and add mustard seeds, when it splutter add heeng
and let it cool.
6.After cooling add vusiri kayalu and oil to the mixture and mix well.
7.Add lemon juice and mix it and close with lid.
8.After two or three days it will be ready to eat.

In India we use to store in shelf, but in U.S. we are preparing with
frozen vusirikayalu. So we must store in refrigerator.

Enjoy with hot rice.

వేరుసెనగ ఉండలు: Verusenaga Vundalu- Peanut & Jaggery Sweet



INGREDIENTS:

1 Cup Peanuts/verusenagapappu
1 Cup Jaggery (grated)
Water to melt the Jaggery.


METHOD:


1. Dry roast peanuts and let it cool.
2. Now remove skin by rubbing the peanuts with your palm.
3. Separate skin from nuts and keep aside.
4. Heat jaggery in a pan, adding little water.
5. When the syrup becomes a thick string, add peanuts and mix well.
6. Remove from fire and make desired size balls.


Caution : You have to make balls after applying ghee on your hands however your hands will become red because of the hot nuts & jaggery.

Variations : Grease the plate and spread the nuts on it and allow it to cool. Now with a knife, cut it into desired shapes.

డాంగరు పచ్చడి: Dongaru pacchadi: Split black gram with yogurt


Serving for -2 persons

INGREDIENTS:

Minapappu/ black gram dal ----1/2 cup
Kaaram/ Red chilly powder------11/2 tsp
Salt to taste
Perugu/yogurt ------------------3/4 cup
Cilantro--------some
Curry leaves-----some
Lemon juice------1 to 11/2 tsp

SEASONING:

Aavaalu/mustard seeds---1/2 tsp
Cumin seeda/ Jeelakarra--1/2 tsp
Split black gram dal/minapappu--1tbsp
Asafitodia/heeng/inguva-------1/2 tsp


METHOD:

1.Lightly roast dal and let it cool.
2.Grind very nice powder.
3.Take yogurt add salt and chilly powder and mix well.
4.Heat oil in a small pan and add mustard seeds
5. When it splitters add cumin seeds, dal and fry till brown, then add heeng and curry leaves.
6.Add lemon juice and mix well.
7.Garnish with cilantro and serve.


This item is goes well with hot rice and roti.

చలిమిడి: Chalimidi- Traditional Rice Sweet



ANDHRA SPECIAL SWEET

INGREDIENTS:

Rice ---1 cup
Jaggery----1 cup( grated)
Coconut pieces ---- 1/2 cup (cut in small cubes)
Ghee-------1 tbs
Elachi/cardamom powder -----1 tsp


METHOD
:

1. Soak the rice in water for one hour.
2. Drain the water and spread them on a cloth and dry.
3. Do not dry too much.
4.Grind finely and sieve to get very nice flour.
5.Cut the coconut in to small pieces and fry them in little
ghee until turns light brown.
6.Add little water to jaggery and make very thick syrup.
7.Test for syrup take a little syrup and drop in water.
If you can make fa ball out of that from water, that is right paakam.
8.Turn off the heat and add rice flour little by little.
9.while mixing thoroughly to avoid lumps.
10.then add coconut pieces , elachi powder and ghee and mix well.
11.Cover with lid.
12.When it is cool, make balls and store in a dry container.

variations: If you want you can make with sugar instead of Jaggary.

This traditional sweet dish is mandatory in the following occasions:

While seeing off the bride after wedding.
Offered to the pregnant woman at baby shower.
Offered to the young mother while leaving for her husband's home.

నూనె గోంగూర: Nune Gongoura- Kenaf Leaves





INGREDIENTS:

1 Bunch gongura/ Kenaf leaves
10 to 12 green chilies (as per taste)
Salt to taste
11/2 tsp Red chilly powder
1/2 cup Gingile oil/sesame oil/nuvvula nune
1 Big onion
2 Tbs senagapappu/bengalgram dal/chanadal
1 Tbs minappappu/split black gramdal/uraddal
1 Tsp aavalu/mustard seeds
1/2 tsp menthi podi/fenugreek powder

Method
1.Wash and chop gongura/ Kenaf leaves and keep aside.
2.Heat oil in a pan and add mustard seeds.
3.When it splutters add uraddal and chanadal.
4.Add red chillies and fry them.
5. Now add cut onions and fry it.
6. When onions are half fried add gongura leaves and fry.
7. Add salt, green chillies and fenugreek powder.
8. Mix well and add red chilly powder.
9. Cook them until it is done.
